Shallot sauce

Shallot sauce is one of the basic sauces for steak, and is completely wonderful, easy to make and is just the topping for a perfect steak – however you consider steak to be perfect!

Ingredients

2 garlic cloves

 

500 g (approx 1 pound) chopped shallots

 

1 Tbsp butter

 

1 Tbsp olive oil

 

400 ml (14 oz) good beef stock

 

1 Tbsp Soy sauce

 

25 ml (1 oz) brandy

How to do it
Making the sauce
Peel, crush and chop the garlic and cook in the oil and butter until translucent.

 

 

After a minute or two add the shallots on a medium heat.

 

 

When the shallots start to colour add the brandy, stock and soy.

 

 

Reduce the stock, stirring occasionally until the sauce is thick and glistens.
