Steak in Ale Pie

Steak in Ale Pie is just what you need at this time of the year, rich and satisfying, and if you’re lucky and have some ale left over, it’s all the better in a glass!

INGREDIENTS

For the filling

 

1 Kg of beef ( either stewing steak, or probably better a topside joint cut into cubes)

 

 

2 medium sized onions

 

 

6 mushrooms chopped finely

 

 

Vegetable oil

 

 

2 tablespoons of plain flour

 

 

500 ml brown ale

 

 

1/2 teaspoon dried thyme

 

 

Salt and pepper

 

For the Suet pastry

 

 

250 g Self Raising flour and 100 g plain flour

 

 

1/4 teaspoon salt

 

 

175 g suet

 

 

Cold water

You really do need brown ale for this. Pale ale can be a little hoppy and fragrant, and Guinness can be a little bitter.

You will need 1 Kilo of beef ( either stewing steak, or probably better a topside joint cut into cubes)

 

 

2 medium sized onions

 

 

6 mushrooms chopped finely

 

 

Vegetable oil

 

 

2 tablespoons of plain flour

 

 

500 ml brown ale

 

 

1/2 teaspoon dried thyme

 

 

Salt and pepper

 

 

Place some vegetable oil in pan

 

 

Fry the mushrooms and onions

 

 

Dust the beef with a couple of tablespoons of plain flour

 

 

Once the onions are becoming translucent, turn the heat up and add the floured beef, which you want to brown on all sides

 

 

As the beef changes colour add 500 ml brown ale

 

 

Add the thyme and season with salt and pepper

 

 

Put the lid on the pan and turn the heat right down so it is just simmering

 

 

Leave for 2 hours check regularly for liquid

 

 

Once cooked, let the meat cool completely

 

 

Transfer to a medium sized roasting tin

 

 

Top with either flaky pastry (see other podcasts) or suet pastry

 

 

Preheat the oven to 190 ºC, 375ºF, Gas 5

 

 

Suet pastry

 

 

250 g Self Raising flour and 100 g plain flour

 

 

1/4 teaspoon salt

 

 

175 g suet

 

 

Cold water

 

 

Sift these into a bowl – you can add a teaspoon of dried mustard powder or 1/2 teaspoon of dried thyme if you like but this is optional

 

 

Mix the suet into the flour

 

 

Add 3 to 4 tablespoons of cold water and use a knife to bring it all together

 

 

Bring it all together with your hands and place on a well floured surface

 

 

Lift the pastry onto the meat and shape into the tin with your hands

 

 

Bake at 190 ºC, 375ºF, Gas 5 for 25 – 30 minutes
