Pear and Ginger Cake

Pear and Ginger Cake is an old favourite, ginger and pear make excellent bed fellows and the spices make for an excellent Autumnal treat.


You can decide to layer the top of the cake with pears, almonds, or just icing sugar! The most important part is the pears in the middle of the cake. This is wonderful with chocolate sauce!


You will need:



120 g Self Raising flour



100 g Plain flour



1 rounded teaspoon ground ginger



1 level teaspoon ground cinnamon



80 g ground almonds



100 g dark soft brown sugar



2 rounded (or generous) tablespoons treacle



3 rounded (or generous) tablespoons golden syrup



150 g butter



150 ml milk with 1 large egg beaten into it



25 g stem ginger, chopped finely



4 pears – just ripe, peeled, cored and sliced into 6 pieces each



How to do it



Preheat the oven to 170ºC, 325ºF, Gas 3



Grease and line a 23 cm springform baking tin



Sift the two flours and the spices together and stir in the almonds



In a pan place the sugar, syrup, treacle, butter and heat gently to melt, stirring



When the butter mis is melted and combined, remove from the heat



Make a well of the dry ingredients and pour in the butter mixture, beat well to combine



Add the milk and egg mixture, beating again



Stir in the stem ginger



Put 3/4 of the mixture in the tin and layer your pears on the top then add the rest of the mix.



Bake for an hour to 1 hour ten minutes



Allow to cool completely before removing the paper from the cake.
