Swirly fruit sponge

This swirly cake is easy to bake, it is an example of a simple light sponge, augmented with some simmered fruit. It’s easy and delicious.

Butter an ovenproof dish

 

250 g frozen forest fruits

 

1 dessert spoon of golden syrup

 

Heat together in a pan under a medium heat, remove from the heat and allow it to cool

 

Pour into your buttered dish

 

You also need

 

120 g butter

 

120 g soft brown sugar

 

2 eggs

 

 

You also need

 

130 g self raising flour

 

1 teaspoon vanilla extract

 

3 tablespoons milk

 

 

Cream together the butter and sugar

 

Beat the eggs

 

Sift in half the flour and add the eggs and the vanilla

 

Then beat in the rest of the flour and add the milk, mix well

 

 

Heat the oven to 180 C, 350 F, Gas 4

 

 

Dollop the cake mix round the edge and then the centre, smooth over, and bring some of the fruit mix the surface

 

 

Bake for 25 – 30 minutes – it needs to be golden and springy
