Hummus

Hummus is one of those sauces that you either love or not. The majority I have spoken to love it. It is made from chickpeas and tahini, garlic and a little lemon. Really easy to make, even easier to eat!

175g chickpeas, soaked in water overnight

 

2 garlic cloves, chopped

 

5 tablespoons tahini

 

40 – 50 ml lemon juice

 

40 – 60 ml olive il

 

Salt to taste

 

Drain the chickpeas and put them in a saucepan, simmer for 2 – 2 1/2 hours

 

Drain well and puree with the garlic

 

Add the lemon juice, tahini and olive oil, mix well

 

Season to taste
